Good morning and welcome to your Wednesday edition of
A to Z Recipes
Newsletter. As some
of you know through experience, this recipe newsletter is much more
than sharing recipes. For many, it has been the doorway to a world of
friendship. We have scores (if not hundreds) of readers who have become
friends as a result of sharing recipes here, and to a large degree,
sharing thoughts in our QT forum. I'm
not talking about just e-pals ... I mean true, face-to-face, lifelong
friends. Heck, some folks who don't
even like me have made friends there and branched out on their
own and formed new circles around what was first found there! I speak
of this now not only as an introduction to today's issue, but as an
invitation to become more than a reader. Become a friend! Visit the QT, poke your
head in and say "howdy!". Share a few recipes for posting in issues,
send me a funny joke, or just share something of yourself with others.
We keep email addresses private and no one is going to get any closer
than what you want.
Our a2z family will be visiting the Charleston, South
Carolina area this year. The reservation is for the week of
November 5-11, 2011. I have updated the trip page on our web site which

We will be renting a lovely beach house on Isle of Palms.
The time is NOW for you to
notify me if you will be staying at the house with us. Space at the
house is extremely limited. (I believe we have room for two more
persons.) Use the link on the web page to confirm your interest in
sharing expenses of the luxury rental beach house (save at least one
half over a hotel). Of course, there are many great places in the area
in case you miss out on staying in the house. It has been decided that
we will make a day-trip to Savannah, GA
to shop and then lunch at The Lady &
Sons Restaurant (owned by Paula Deen).

Can you believe we're starting our fourth year of first-Wednesday
issues from Patricia
in Charlevoix, MI? I can't, either!!! And she has
shared a very special issue with us today, not only in its recipe
content, but the motivating force behind it. She dedicates today's
issue to a great QT
friend, Leasa,
who passed away in January. Leasa
would spar back and forth about various subjects, but she was a great
fan of gardening, camping, cooking, motorcycling and SPAM (that canned
meat wonder!). Patricia
started this issue while Leasa was
still alive,
then took ill herself and had to shelf it for a few months. During that
time, Leasa
left us. I encouraged Patricia to
finish it and share it
with us. I believe you will enjoy it. I am positive Leasa is
smiling
down on us with a can of SPAM in hand, ready to start cooking!

Last
Spring when
the gals and I were driving home, we passed a SPAM
truck brightly colored with pictures of the various SPAM products.
Immediately I thought about Leasa and sent her an email about the truck
who replied she didn't know there was such a vehicle. With her good
sense of humor in full gear, we had fun going back and forth about
SPAM. As I'm sure Leasa is now looking down upon all the a2z members,
it seems appropriate to dedicate this issue to her. I surely hope she
has a fully equipped kitchen, a motorcycle and a camper.

The Breast Cancer site is having trouble getting
enough people to click on their site daily to meet their quota of
donating at least one free mammogram a day to an underprivileged woman.
It takes less than a minute to go to their site and click on "donating
a mammogram" for free (pink window in the middle).
This doesn't cost you a thing. Their corporate sponsors/advertisers use
the number of daily visits to donate mammograms in exchange for

SPAM,
possibly a contraction of "spiced ham", was named by actor
Kenneth Daigneau, the brother of R. H. Daigneau, a former Hormel Foods
vice president. When other meatpackers started introducing similar
products, Jay C. Hormel decided to create a catchy brand name to give
his spiced ham an unforgettable identity, offering a $100 prize to the
person who came up with a new name. At a New Year's Eve Party in 1936,
Daigneau suggested the name SPAM.
Jay C. Hormel, son of the company's founder, was determined to find a
use for several thousand pounds of surplus pork shoulder. He developed
a distinctive canned blend of chopped pork and ham known as Hormel
spiced ham that didn't require refrigeration.
SPAM luncheon meat was hailed as the "miracle meat," and its
shelf-stable attributes attracted the attention of the United States
military during World War II. By 1940, 70 percent of Americans had
tried it, and Hormel hired George Burns and Gracie Allen to advertise
SPAM on their radio show.
100 million pounds of SPAM were issued as a Lend-Lease staple in the
rations to American, Russian, and European troops during World War II,
fueling the Normandy Invasion. GIs called SPAM "ham that failed the
physical." General Dwight D. Eisenhower confessed to "a few unkind
words about it - uttered during the strain of battle.
Former British Prime Minister Margaret Thatcher, as a young woman of 18
working in her family's grocery store, remembers SPAM as a "wartime
delicacy."
Nikita Khrushchev credited SPAM for keeping the Soviet Army alive
during World War II. "We had lost our most fertile, food-bearing lands,
the Ukraine and the Northern Caucasians. Without SPAM, we wouldn't have
been able to feed our army."

Did You Know?
SPAM luncheon meat was introduced to the public in 1937.
On March 22, 1994, Hormel Foods Corporation celebrated the production
of its five billionth can of SPAM.
Five billion cans of SPAM would feed a family of four, three meals a
day for 4,566,210 years.
If laid end to end, five billion cans of SPAM would circle the earth
12.5 times.
Spam sold in North America, South America, and Australia is produced in
Austin, Minnesota, (also known as Spam Town USA) and in Fremont,
Nebraska. Spam for the UK market is produced in Denmark by Tulip under
license from Hormel. Spam is also made in the Philippines and in South
Korea. In 2007, the seven billionth can of Spam was sold.

Easter Sunday falls on April 24,
2011. We're looking for recipes to
prepare a festive meal for Easter and other Springtime meals. We would
love recipes using fresh ingredients, garden favorites, as well as
fresh fruits and herbs. We will be posting this special issue in plenty
of time for Easter and all of your Spring celebrations with family and
friends! Be sure to use the Monthly
Theme
links for
your
submissions so I'll know where you'd like
them posted, ok? It has been suggested that we limit the number
of recipes posted to 10 per reader. Any extras will be saved to use in
regular issues (which we sorely need!).
Note: There
are still some
readers who routinely send in an email that says "do this... do that"
and call it a recipe submission. I have graciously put it all in
recipe format and made you a hero. PLEASE provide a recipe,
i.e.: Title, Ingredients, Procedure, along with your name and location.
You'll be an even bigger hero in my eyes! Please share your

CAMP MEAL IN ONE
4 peeled potatoes, cubed
1 large zucchini, peeled and diced
2 or 3 celery ribs, diced
2 large onions, diced
2 sweet peppers, diced
1 can SPAM, cut into 4 pieces
Salt and pepper to taste
Dice vegetables, combine and mix well. Place one slice of SPAM on a
square of foil; top with 1 cup of vegetable mix. Season with salt and
pepper. Tightly seal each package. Roast on grill (or in a pan in oven)
for 30 minutes or until done.
BAKED POTATO AND
BEANS
4 large russet potatoes
1 can (16 ounce) pork and beans
1 can SPAM, diced
aluminum foil
Wash potatoes well and spear each potato a few times with a fork. Wrap
potatoes in foil and place on grill or next to the fire. Let potatoes
bake for 30 to 40 minutes, turning every ten minutes. When potatoes are
soft in the middle, they're ready. Add SPAM to pork and beans and warm
up in a small saucepan. Split a potato open and place it on a plate.
Pour 1/4 of the pork and beans over the potato. Repeat process with
three remaining potatoes. Serves four people.
WALKING TACOS

Small, individual bags of tortilla chips (crushed)
SPAM of choice, diced, 1/4 cup for each bag
Shredded cheese
Lettuce
Tomato
Salsa
Sour cream
Avocado
Mix everything in tortilla bag and enjoy.
BAGGY OMELETS

2 large eggs
1 can spam
Any of your favorite omelet veggies
Shredded cheddar cheese
Salt and pepper to taste
Crack eggs in a ziplock bag. Add shredded cheese. Add SPAM and veggies
salt and pepper to taste. Put baggy in a pot of boiling water for about
5 to 10 min. Then just cut bag off and enjoy!
EGG MUFFINS

4 English Muffins
4 slices SPAM
4 slices American Cheese
4 eggs or Scrambled Egg Mix if you are a klutz
Salt and Pepper to taste
Fry SPAM to desired crispness. Prepare scrambled eggs, keeping them on
the firm side. Toast muffins lightly over the fire (optional). Assemble
eggs, cheese, sausage and seasoning on the muffin, and enjoy
HOT SPAM SALAD
SANDWICHES

1 large can SPAM, diced
4 or 5 hard-boiled eggs
1 bell pepper
1 small to med. onion
Salt & pepper to taste
Mayonnaise to moisten
Grate first four ingredients into bowl. Add salt, pepper and mayonnaise
to moisten. Make open face sandwiches and cut in 4 pieces, triangle
shaped. I use a whole grain bread. Toast lightly under broiler and
serve, or can be served cold.
ELEGANT POTATO SPAM
CASSEROLE

1 (10-3/4-ounce) can condensed cream of potato soup
1/4 cup grated Parmesan cheese, divided
2 tablespoons sherry
4 cups hot, prepared mashed potatoes
Nonstick cooking spray
1 (12-ounce) can SPAM luncheon meat, cut into small pieces
1/4 teaspoon paprika
Heat oven to 425°F. Combine soup, 2 tablespoons cheese, and sherry;
stir until smooth. Spoon mashed potatoes into 1-1/2-quart casserole
coated with cooking spray. Sprinkle SPAM on top of potatoes. Spread
soup mixture over SPAM. Sprinkle remaining 2 tablespoons cheese and
paprika over soup mixture. Bake 20 minutes or until thoroughly heated.
Serves 8.
MONTE CRISTO SANDWICH
1 can SPAM turkey, sliced in 6 pieces
1 (12-ounce) can SPAM classic, sliced in 6 pieces
6 slices Swiss cheese, halved
12 slices white bread
2 eggs
1/4 cup milk
3 tablespoons margarine
Cut SPAM into 12 slices. Layer cheese and SPAM on 6 slices of bread;
top with remaining bread slices. Mix eggs with milk; quickly dip both
sides of sandwiches into egg mixture. Saute in margarine on griddle or
skillet over medium heat until cheese melts and both sides are browned.
Serve immediately.
BAGELIOUS
2 bagels, sliced
2 slices cheddar cheese
2 slices apple of choice
2 slices SPAM Lite
Place a slice of SPAM, cheese and apple on bagel half, top with other
half, place on cookie sheet and place in preheated oven 5-10 minutes
until cheese starts to melt.
GRILLED SPAM
PIZZAWICHES
4 slices bread
Butter
Pizza sauce
1 can SPAM
Mozzarella cheese
Butter bread on both sides. Place 2 slices on griddle or frying pan.
Spread with sauce. Add slices of SPAM, then top with cheese and more
sauce. Place other slice of bread on top and fry until golden brown and
cheese is melted.
SPAM CASSEROLE
12 slices bread
3/4 pound sliced sharp cheese
1 can SPAM, diced
6 slightly beaten eggs
3 1/2 cups milk
1/2 teaspoon salt
1/4 teaspoon dry mustard
Cut bread in circles, keep scraps and circles separate. Fit scraps into
bottom of 9x13" pan. Place cheese over bread, then SPAM followed by
bread slices. Combine remaining ingredients and pour over mixture.
Cover and refrigerate at least 6 hours. Bake, uncovered at 325 degs for
55 minutes. Sprinkle with extra cheese during the last 5 minutes of
baking.
SPAM MAC CASSEROLE

8 ounces cooked macaroni
1 can SPAM, cubed
1/4 cup cubed cheddar cheese
1 can cream of celery soup
1 can evaporated milk
Dash of onion powder
1 green pepper, diced
1/2 cup fine bread crumbs
Combine all ingredients in a 9x13 pan. Top with bread crumbs and bake
at 350 degs for 1 hour.
NOODLES & SPAM

1/2 pound noodles, cooked
1 can cream of chicken soup
1 cup milk
1 can SPAM, cubed
1/4 pound American cheese, cubed
1/4 cup minced onion
3/4 cup fine, dried bread crumbs
2 tablespoons melted butter
Combine soup and milk. Arrange SPAM, cheese, onion, noodles and soup
mixture in layers in a greased 2 1/2 quart greased casserole. Sprinkle
with buttered bread crumbs and bake at 375 deg for 30 minutes.
SPAM CONES - kids
1 can SPAM
1/4 cup Mayo
1 small dill pickle
4 ice cream cones - flat bottom
1/4 cup shredded cheese
Mix all ingredients and scoop into cone. Top with cheese
SPAM & CHEESE
SOUFFLE
4 eggs
1 cup milk
1/3 pound cheddar cheese, cubed
4 slices bread
4 slices SPAM
Remove crust from bread and cube it. Beat eggs, add milk, cheese and
SPAM. Place in large oven proof dish and refrigerate overnight. Bake 1
hour at 350 degs or until firm.
CHINESE SALAD

1 small head cabbage, shredded
1 package Ramen noodles, dry and crushed
4 tablespoons almonds, sliced
1 can SPAM
4 tablespoons sesame seeds, toasted
4 green onions, chopped
Dressing:
4 tablespoons sugar
3/4 cup salad oil
2 teaspoons salt
6 tablespoons vinegar
1 teaspoon pepper
2 teaspoons Accent - optional
Shred cabbage, break up noodles. Add almonds, SPAM, sesame seeds and
green onions. Shake dressing ingredients together and add to salad mix.
SPAM MELTS

1 lb. Velveeta cheese
1 can Spam
1 onion
Grate all ingredients (use large holes on grater). Mix all together and
spread on whole wheat English muffins. Broil until cheese is melted and
lightly browned.
SPAM 'N SWISS ON
BISCUITS

1 can SPAM, diced
1 teaspoon instant minced onion
2 tablespoons soft margarine
2 teaspoons prepared mustard
10 ounce can refrigerated biscuits
5 slices Swiss cheese
Combine SPAM, onion, margarine and mustard, reserving 1/3 cup of
mixture. Separate dough into 10 biscuits; press 5 into 3 1/2" circles
on ungreased cookie sheet. Spoon scant 1/4 cup meat mixture onto each
round. Fold cheese into quarters, place on meat, pressing slightly.
Spoon reserved meat mixture over cheese. Press remaining 5 biscuits to
4" circles, slightly stretch each over meat mixture. Do not seal edges.
Bake at 375 degs for 10-15 minutes or until golden brown.
SPAM SOUFFLE
2 medium onions
3/4 cup cracker crumbs
1 can mushroom soup
3 eggs beaten
1 can SPAM
1/2 cup grated cheese of choice
1 cup milk
Grind onions, SPAM, cracker crumbs and cheese in meat grinder. Add
soup, milk and eggs. Bake 45 minutes at 350 degs.
TWICE BAKED SPUDS

4 large baking potatoes
1/4 cup butter or margarine
1/4 cup milk
1/2 teaspoon salt
1/8 teaspoon pepper
Sour Cream to taste
1/2 cup Cheddar cheese
1 can SPAM, cooked crisp
Heat oven to 350 degs; cook SPAM crispy, then dice. Place potatoes on
oven rack and bake 60 to 75 minutes until tender. Once cooked cut
potatoes lengthwise and scoop out inside leaving a thin shell. In large
mixing bowl combine potatoes with rest of ingredients with exception of
cheese and bacon. Beat at medium speed until light and fluffy - 2 to 3
minutes - scraping bowl sides often. Stir in SPAM, then fill shells
with mixture. Sprinkle cheese on top; place on cookie sheet and
continue baking 10-15 minutes or until cheese is melted.
SPAM FRIED RICE

2 cups cooked rice
1 can bean sprouts, drained
2 tablespoons green onions, sliced fine
1 can SPAM, diced
2 tablespoons soy sauce
4 tablespoons cooking oil
1 egg
1/4 cup shrimp - optional
1 garlic clove, minced.
Salt & Pepper to taste
Cook rice the night before. Scramble egg in oil; slice in thin strips
and set aside. Brown garlic with oil that is left, then add bean
sprouts, SPAM and rice in 3 minute intervals, stirring constantly. Add
soy sauce, half of scrambled egg, and green onion. Place on platter,
garnish with remaining onion and egg.
SHREDDED POTATO AND
SPAM PIE
4 slightly beaten eggs
1 cup mixed peas and carrots
1 can SPAM, diced
1 cup shredded Cheddar cheese
1/2 cup milk
1/4 teaspoon minced dried onion
2 cups potatoes, peeled and shredded
1/2 cup Cheddar cheese
Combine eggs, vegetable, SPAM, 1 cup Cheddar cheese, milk and onions.
Set aside. Combine potatoes and 1/2 cup cheese. Press onto bottom and
up sides of ungreased 9" pie pan. Pour filling into pan and bake at 350
degs for 45 to 50 minutes. 6 servings.
SPAM DIVAN

1 bunch broccoli
1/4 cup butter
1/4 cup flour
2 cups milk
2 chicken bouillon cubes
2 cans turkey SPAM
1/4 cup Parmesan cheese
Cook broccoli until just tender, drain. Arrange on oven proof platter.
Melt butter; stir in flour; add milk and cook until sauce is thickened
and smooth. Add bouillon cubes, stir to dissolve. Pour half of sauce
over broccoli. Top with diced SPAM, cover with remaining sauce.
Sprinkle with grated cheese. Place dish under broiler until cheese is
melted and sauce is bubbling hot. Makes 6 servings.
SPAM CHILI
2 cans turkey SPAM
1 medium onion, chopped
1 medium green pepper, chopped
1/4 cup celery
1 can (15 ounce) kidney beans with liquid
1 can stewed tomatoes
1 can (12 ounce) tomato juice
1 tablespoon Worcestershire sauce
1 teaspoon chilli powder
1/2 teaspoon salt
1/4 teaspoon garlic powder
In a large skillet, cook onion, green pepper and celery on medium heat
for 10 minutes. Add SPAM and remaining ingredients. Bring to a boil,

EGGS
8 eggs
2 tablespoons milk
1 large tomato, peeled, seeded & chopped
1 tablespoon green pepper
1 tablespoon chopped parsley
3 tablespoons butter
1/2 can SPAM, diced
Beat eggs in mixing bowl with milk. Add tomato, green pepper and
parsley, stir well Melt butter over low heat in skillet; saute SPAM 3
minutes. Pour in egg mixture, cook, stirring frequently until set.
QUICK 'N EASY
COCKTAIL SWIRLS

3 ounce package cream cheese, softened
1 can SPAM of choice, diced
2 tablespoons finely chopped onion
1 teaspoon milk
8 ounce can refrigerated crescent rolls
Grated Parmesan cheese
Heat oven to 375 degs. Fry SPAM until nice and crispy, then combine
with cream cheese, onion and milk. Separate dough into 4 rectangles,
pressing perforations to seal. Spread about 1 1/2 tablespoons cheese
mixture on each rectangle. Starting at long side, roll up and seal. Cut
each roll into 8 pieces. Place cut side down on ungreased cookie sheet.
Lightly sprinkle with cheese. Bake at 375 degs 12-15 minutes or until
golden brown. Serve warm
SPAM SALAD
1 1/2 cup V-8 juice
1/2 cup water
1 package lemon jello
1 can SPAM, diced
2 hard boiled eggs, diced
1 1/2 cups chopped celery
2 tablespoons green pepper
1/2 small onion, minced fine
1 cup Miracle Whip
Heat V-8 & water. Dissolve Jello in mixture and let cool. Add
remaining ingredients and pour into mold or glass dish.
SPAM-PINEAPPLE SALAD
1 can turkey SPAM, diced
1 1/2 cup pineapple, diced
1 1/2 cup cabbage, shredded
1/2 teaspoon salt
1/8 teaspoon paprika
Mayonnaise
Olives for garnish
Dice and chill SPAM, then combine with pineapple and cabbage. Add salt
and paprika; moisten with mayonnaise. Garnish with olives and serve on
crisp lettuce leaves.
SPAM HAWAIIAN
1 can SPAM of choice
1/2 teaspoon mustard
Small can of pineapple slices
Whole cloves
2 tablespoons brown sugar
Heat oven to 375 degs. Cutting a little more than 1/2 way through,
divide SPAM into 8 sections (fan shape). Place in small baking dish.
Starting with first cut, spread with mustard, then continue with every
other cut. In the same cuts, place 1/2 slice pineapple, place clove in
each slice. Sprinkle brown sugar over all. Bake 20 minutes. To serve,
slice through every other cut so pineapple is the middle of each
serving. Makes 4 servings.
PAPA LOVES SPAM
2 cans turkey SPAM, ground
2 cups grated cheese
1 onion, diced
1/2 green pepper, diced
2 teaspoons ketchup
1 tablespoon mustard
1/2 teaspoon salt
2 loaves French or Italian bread
Mix all ingredients in bowl. Slice bread lengthwise and cover with
mixture. Bake at 350 degs for 25 minutes. Slice into individual
helpings.

Melt butter in 8x8 baking dish. Combine crumbs, Parmesan and salt and
pepper in small bowl. Dip spam in egg, roll in crumb mixture. Place in
baking dish and bake at 400 degs for 10 minutes. Combine sauce,
oregano, sugar and salt in a saucepan; bring to a boil. Pour over SPAM;
top with mozzarella and bake until cheese melts.
RODEO SALAD
1 can of SPAM, diced
2 cups macaroni
1 can (16 ounce) kidney beans, drained and rinsed
1 cup sliced celery
2 tablespoons chopped onions
1/3 cup sliced sweet pickles
1 cup shredded cheese
1/2 cup sliced, stuffed olives
1/2 cup shredded carrots
1 tablespoon dry mustard
Salt and pepper to taste
1/2 to 3/4 cup salad dressing
Cook macaroni. Combine all ingredients in 3 quart bowl; mix well. Chill
and serve on lettuce.
SPAMMY STUFFED
PEPPERS
4 medium green peppers
1 can SPAM, diced fine
2 cups cooked rice
1/4 cup cooked onion
1 1/2 teaspoon salt
1/4 teaspoon pepper
2 cans (8 ounce) tomato sauce
Halve peppers lengthwise. Remove seeds. Wash. Mix rest of ingredients,
using 1/2 cup tomato sauce. Fill pepper halves with mixture. Arrange in
10x13 baking dish, pouring rest of sauce over peppers. Cover tightly
and bake at 350 degs for 1 hour or until peppers are tender.
SPAMARONI SALAD
3 cups elbow macaroni
Vinegar, as desired
1 cup mayonnaise
1 can SPAM, diced
1 small green pepper, finely chopped
4 stalks celery, coarsely chopped
Cook macaroni. Stir small amount of vinegar with mayonnaise,mixing
well. Combine all ingredients in salad bowl; mix well, then chill.
Serve on a bed of lettuce, with crescent rolls.
EASY TUESDAY SUPPER

1 cup flour, plus 1 tablespoon
2 teaspoons baking powder
1 teaspoon salt
1/4 cup plus 1 tablespoon shortening
1/4 scant cup of milk
1 egg, beaten
1 can SPAM of choice, diced
1-1/2 cups gravy
2 potatoes, diced
2 carrots, sliced
1 stalk celery, chopped
2 slices of onion, chopped
1 cup peas
2 tablespoons cornstarch
1/4 cup water
Sift together flour, baking powder and salt. Cut in shortening. Add
milk to egg, stir into dry mixture. Shape into ball, wrap and
refrigerate. With exception of cornstarch, combine remaining
ingredients in large saucepan. (Hold back a portion of the gravy for
serving.) Cook until vegetables are tender; season to taste. Combine
cornstarch, 1 tablespoon of flour and water. Add to hot vegetable
mixture. Pat out 2/3 of the dough ball on floured surface. Place in 9
inch pie pan and fill with SPAM mixture. Pat out remaining dough and
place on top of mixture. Bake at 375 degs for 30 minutes or until
golden brown.
DEEP DISH SPAM PIE
1/4 cup butter
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon dry mustard
1 teaspoon minced onion
2 cups milk
2 cans SPAM, diced
2 hard boiled eggs, chopped
1 can ( 8 1/2 ounce) peas, drained
1 recipe of biscuit or pie crust dough
Melt butter, blend in flour, salt and mustard. Add pepper, onion and
milk. Cook over medium heat, stirring constantly until thick. Add SPAM,
eggs and pear. Pour into 1 1/2 casserole. Prepare desired dough recipe,
roll out and cover casserole, folding edges under. Prick dough with
fork to allow steam to escape. Bake at 450 degs for 20 minutes or until
top is browned.
SPAM BALLS
3 cans of SPAM, ground
2 cups dried bread crumbs
1 cup milk
1 teaspoon salt
2 eggs beaten
1/2 cup vinegar
1 1/2 teaspoons dry mustard
1 cup brown sugar, pack firm.
1/2 cup water
Combine spam, crumbs,milk, salt and eggs. Form into balls and place in
baking dish. Combine remaining ingredients and pour over SPAM balls.
Bake at 350 degs for 30 minutes.
SOUTHERN HASH
1 can SPAM cut in small cubes
1 cup raw potatoes -- cut in small cubes
1 or 2 onions cut fine
Flour - if thickening is needed
Brown SPAM and onions together in 2 tablespoons of butter. Add 2 cups
boiling water and the potatoes. Salt and pepper to taste. Cover and let
cook slowly until all ingredients are tender. The hash should have
plenty of gravy, and more hot water may be needed. A small amount of
flour thickening may be added when done. Serve on toast or preferably
soft grits.
CHEESY SPAM SURPRISE
1 cup instant potato buds
2/3 cup water; boiling
2 tablespoons onion, minced
2 teaspoons horseradish, prepared
1/4 teaspoon salt
1/4 teaspoon pepper
1 can SPAM with bacon, minced
40 Cheddar cheese cubes; 1/2"
1 egg; slightly beaten

Salad oil
Combine potato buds, boiling water, instant onion, horseradish, salt,
and pepper; add SPAM, and mix thoroughly. Roll about 2 teaspoons of
mixture around a cheese cube to form a ball.
Dip balls in egg, and roll them in breadcrumbs. Deep fry in hot oil for
2 to 3 minutes or until golden brown. Serve hot.
SPAM CHEESE BALLS
3 (8 ounce packages) Philadelphia cream cheese
2 cans Hickory SPAM, ground
3 tablespoons Worcestershire sauce
6 Green onion tops chop fine

Mix all ingredients together. Form a ball and roll in chopped pecans.
SPAM IN A PAN
2 cans of SPAM, cut into cubes
1 can (14 ounce) sauerkraut
1 1/2 cups water
1 1/2 cup dry rice
1/2 cup Thousand Island Dressing
3 ounces Swiss cheese,cut into Strips
Mix SPAM, sauerkraut, and water in a large skillet. Bring to a full
boil. Stir in rice and cook until tender. Pour dressing over rice and
top with cheese. Cover; remove from heat. Let stand 5 minutes. Makes 4
servings.
SPAM IN A POCKET
1 can of SPAM, cut in 4 pieces
4 pieces of Swiss cheese, sliced

Holding slice of cheese in hand, layer half with SPAM. Sprinkle on the
sauerkraut. Fold over cheese and slip into Pita bread. Warm in 300
degree oven until cheese melts.
GHOST & GOBLINS
2 cans of SPAM, diced
1 large onion, chopped
1 teaspoon salt
1/4 teaspoon pepper
1 can stewed tomatoes
1/4 pound Cheddar cheese, cubed
Nacho chips
Place SPAM, onion, salt and pepper in skillet. Cook and stir over heat
until onion is soft. Add tomatoes and cover. Simmer over low heat,
about 30 minutes. Stir in cheese cubes. Cover skillet and let stand a
minute or two until cheese melts. Serve with nacho chips.
NACHO ALA SPAM
2 cans Hot & Spicy SPAM
1 large onion, chopped
1 can (16 ounce) refried beans
1 c1n (4 ounce) chopped green chiles, drained
1 cup shredded cheddar cheese
1 1/2 cup shredded Monterey jack cheese
1 cup taco sauce
1 ripe avocado, mashed
1 cup sour cream
Tortilla chips
Cook onions until translucent; season to taste with salt and pepper.
Spread refried beans in the bottom of an 11/13 inch baking dish; top
with SPAM and onion. Sprinkle chiles, then cheeses, then taco sauce
over all. Bake at 400°F for 20 minutes. Remove from oven. Mound mashed
avocado in the center; top with sour cream. Serve with tortilla chips.
DAKOTA SPAM
2 cans SPAM with cheese, minced
1/2 small onion, diced
1 can (17 ounce) cream style corn
4 med. potatoes, peeled and cut in 1-inch cubes
Place SPAM on bottom of 2 quart casserole dish. Add onion. Layer
potatoes over meat. Season with salt. Pour corn over potatoes. Dot with
pats of butter. Bake in microwave about 25 minutes, stirring gently
once or twice.
OLD WEST SPAM

1/4 lb bacon, fried & crumpled
1 medium onion
1 can ( 15 1/2 ounce) red kidney beans
1 can (22 ounce) baked beans w/molasses

1 can (28 ounce) baked beans
8 ounces pineapple tidbits, drained
1 large onion, chopped
1 large green pepper, chopped
1/2 cup barbecue sauce
2 tablespoons soy sauce
1/2 teaspoon salt

Combine all ingredients and mix well. Place in covered casserole dish
and bake at 350 degs for 1 hour.. Serve in bowls. Yield: 6 servings.
TEX MEX SPAM SQUARES
2 cans Hot and Spicy SPAM, diced fine
1 cup sour cream
2/3 cup mayonnaise
1 cup shredded sharp cheddar cheese
2 tablespoons chopped onion
2 cups Bisquick
1/2 cup cold water
1 large sliced tomato
1/2 cup chopped green peppers
Heat oven to 375 degrees. Grease 13 x 9 x 2 baking dish. Mix, sour
cream, mayonnaise, cheese and onion. Mix Bisquick and water, pat in pan
pressing 1/2 inch up sides of baking dish. Layer SPAM, tomatoes and
pepper. Spoon cheese mixture on top. Bake about 30 minutes at 350 degs.
TEX MEX SPAM BITES
2 cans Hot and Spicy SPAM, ground
1 package. taco seasoning mix
1/2 cup shredded Mexican blend cheese
1/3 cup sour cream
2 tablespoon mild taco salsa
1 1/4 cups crushed nacho corn chips
Preheat oven to 350 degrees. In medium bowl, combine SPAM and seasoning
mix. Press 1 tablespoon meat mix in bottom and up sides of 30 (1 1/2
inch) size muffin pan cups, leaving a well in center. Combine cheese,
sour cream and taco salsa; mix well. Place 1/2 teaspoon of mixture in
each cup. Bake 10-12 minutes or until centers are set and meat is
cooked through. Remove from oven. Sprinkle with chips; remove from
pans. Serve warm. Garnish with avocado slices, olives and parsley.
Brush avocado slices with lemon or lime juice to keep them from turning
brown once they are sliced.
SPAM IN A HURRY
2 cans SPAM, diced
1 large onion, chopped
1 can cream of mushroom soup
1 can mixed vegetables, drained
1 can Chow Mein noodles
1 can cream of chicken soup
Brown onion; add both soups, SPAM, mixed vegetables and 3/4 can of Chow
Mein noodles. Pour into casserole dish. Top with remaining Chow Mein
noodles. Bake at 400 F. for 10 minutes or until hot.
TEX MEX BAKE
2 cups crushed corn chips
1 large egg, beaten
2 tablespoons water
1 envelope onion soup mix
2 cans Hot and Spicy SPAM, minced
1 can (4 ounce) chopped green chiles, drained
1 cup Mexican blend cheese
1 can (8 ounce) tomato sauce
1 medium green pepper, chopped
Preheat oven to 350 degrees F. Combine corn chips, egg, and water;
press into 9-inch pie plate or casserole. Bake 10 minutes. Meanwhile,
in large bowl, combine onion recipe soup mix, SPAM, chilies, and 1/2
cup cheese; evenly press into chip crust. Top with tomato sauce, then
green pepper and bake 30 minutes. Top with remaining cheese, then bake
an additional 5 minutes or until cheese is melted.
SPAM HASH WITH EGG
1 can of SPAM, minced
4 eggs; lightly beaten
1 cup milk
Salt and pepper to taste
Put the SPAM in skillet; mix in eggs beaten with milk and seasonings.
Cook, stirring, over low to medium heat until the sauce is quite well
set. If it is cooked too quickly the eggs will curdle a little, but
since the effect is simply scrambling, this is not a disaster.
SPAM AU GRATIN
2 cups diced SPAM
2 cups milk
1 cup boiling water
2 (11 ounce) cans whole kernel corn with red and green peppers, drained
1 (10 3/4 ounce) can condensed Cheddar cheese soup
1 package scalloped potatoes
Mix all ingredients together and place in covered casserole. Bake,
using directions on scalloped potato box.
SPAM SPREAD
1 (5 ounce) package cheese spread with pimento
1 can SPAM, chopped
2 hard cooked eggs, finely chopped
Toasted English muffin halves or rusks, buttered
Combine cheese spread, SPAM and egg. Store mixture tightly covered in
refrigerator. To serve, spread on toasted muffins or rusks. Broil 3-4
inches from heat 2-3 minutes. Makes 1 2/3 cups.
CHEESY HAM BISCUITS
1/2 tube refrigerated biscuits
5slices Turkey SPAM
5 slices Monterey jack cheese
5 teaspoons honey mustard
Open biscuit dough by peeling back wrapper until container pops.
Separate dough into biscuits. Divide each biscuit in half, sandwich
style. Place a piece of SPAM and small slice of cheese on one biscuit
half. Spread 1/2 teaspoon of mustard on another half. Pinch two halves
together. Repeat and bake according to package directions. Serve hot.
MAC & CHEESE
WITH SPAM
2 cans SPAM, diced
1 rib celery -- chopped
1 tablespoon chopped fresh onion
1 teaspoon celery seed
8 ounces Cheddar-American shredded cheese
1 can (10 2/3 ounces) condensed cream of celery soup
1 can diced tomatoes with juice
1 cup frozen mixed vegetables (peas carrots, green beans) -- thawed
Pepper -- to taste
6 cups hot cooked macaroni
Combine all ingredients, except SPAM, vegetables and macaroni, in the
slow cooker. Cover and cook on low for 6 to 7 hours. Add vegetables
about 1 hour before serving (or microwave them and add just before
serving). Cook macaroni until just tender; drain. Pour slow cooker
mixture into a large serving bowl. Mix in macaroni and SPAM.
CREAMY POTATOES AND
SPAM
1 package (14 ounce) shredded potatoes; thawed
1 cup frozen peas
1 can SPAM chopped
1 can Cream of Mushroom Soup
1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon flour
Preheat oven to 350 F. In large bowl combine potatoes, peas, and SPAM.
In a small bowl mix flour, salt, and pepper with soup. Pour over potato
mixture and blend well. Pour into 8x8 inch baking dish sprayed with
butter cooking spray. Bake 25-30 mins.
ONE DISH SPAM BAKE
1 package (16 ounce) frozen broccoli, cut, rinsed and drained
1 can Cream of mushroom soup
1 can Cheddar cheese soup
1 cup milk
2 cans SPAM, diced
1/2 teaspoon onion powder
2 cups Bisquick baking mix
1 1/2 cup milk
Heat oven to 450F. Mix broccoli, soups, 1 cup milk, SPAM and onion
powder in ungreased rectangular baking dish, 13x9x2 inches. Mix baking
mix and milk. Pour evenly over soup mixture. Bake 27 to 30 minutes or
until light golden brown. Let stand at least 5 minutes.
BUSY DAY CASSEROLE
1 can refrigerated biscuits
4 slices American cheese
1 can cream of mushroom soup
2 tablespoons butter
1/2 cup cracker crumbs (12 single)
1 can SPAM,diced
Grease a round glass baking dish with butter. Pat the ten biscuits flat
and place around the sides of the baking dish. Put the four slices of
cheese on the bottom. Add can of diced SPAM. Over this, pour the can of
mushroom soup, undiluted. Top with cracker crumbs and butter and bake
in a 375 degree oven about 25 minutes. Make a green salad and have
fruit cocktail for dessert.
BAKED SPAM

1 (12 ounce) can SPAM
1 1/2 tablespoons yellow mustard
1/2 cup brown sugar, packed tightly
1. Place Spam in a glass baking dish.
2. Spread yellow mustard over top and down sides until mostly coated.
3. Pour brown sugar on top and spread to make a layer over mustard.
4. Cover with foil and bake at 350 degrees for 30 minutes.
HUMDINGER SPAM SALAD
1 can SPAM of choice
3 celery stalks
1 egg, hard cooked and diced
1 (4 oz.) can sliced mushrooms
10-12 black olives
Mayonnaise or salad dressing to bind mixture
1-2 tablespoons hot mustard, to taste
Salt, pepper and dashes of celery salt - to taste
Slice the celery stalks very thin and on the diagonal instead of
chopping. Dice the egg. The cheapest brand sliced mushrooms is fine for
this recipe. Slice the black olives, using any amount you like. Add
seasonings to taste and enough mayonnaise or salad dressing to bind the
ingredients. Mix all ingredients together.
SPAM MEDLEY
2 cans of SPAM
2 tablespoons butter
1 medium onion; chopped
1/2 cup green pepper; chopped
1 can (4 ounce) mushroom stems and pieces
8 ounces noodles
1 cup Cheddar cheese; shredded
1 teaspoon salt

1 can (28 ounce) diced tomatoes
Saute SPAM in butter in a large skillet until lightly browned. Stir in
onions, green pepper and mushrooms. Arrange dry noodles over mixture.
Sprinkle with cheese and seasonings. Pour tomatoes over all. Do not
stir. Cover. Bring to a boil. Reduce heat; simmer for 1 hour.

SPAM FRITTERS
4 ounces flour
Milk
1 egg
1 tin of Spam
Lots of chips
1 tablespoon oil
Put flour in bowl, mix in enough milk to make a runny paste, pour in
oil beat in one egg. Slice the SPAM into slices 1/4" thick or thinner
if you want more. Dip slices into batter and fry in hot oil until
crispy and golden. Smother with ketchup and scoff the lot with chips.
Beer can be added to the batter to make it lighter and crispier if you
so desire.
TURKEY SPAM ROLLS
12 bamboo skewers
1 can turkey SPAM
2 cans refrigerated crescent rolls
1 package mild chili seasonings
American Cheese
Soak bamboo skewers in water for about ten minutes. Preheat oven to 375
degs. Remove SPAM turkey from the can and cut it up from top to bottom,
cutting into 12 logs. Insert each log onto a skewer. Open the crescent
rolls and pinch them into the form of crescents. Basically you need to
mold them into long rectangles and cut them into six equal pieces.
Repeat the same process for the second can of rolls that you have.
Place the chili seasoning on a plate. Cut cheese into six equal size
strips. Next you need to roll each of the spam logs on the skewer in
the chili mix. Make sure to do that one at a time. Once coated place
the logs on dough and top them off with 2 strips of cheese. Roll up the
dough and seal it by pinching the ends and sides together.
For baking the SPAM turkey you will need a cookie sheet on which to
spread the skewers. Make sure to keep them a distance of at least one
to two inches away from each other. Insert the un-greased cookie sheet
into the oven and bake for up to fifteen minutes or until you find the
surface of the rolls turning golden brown. Once ready the rolls need to
be served with ketchup and mustard as a dipping sauce.
Australia
SIMPLE SPAM SNACK
1 onion
3 or 4 potatoes (depending on size)
1 tin of SPAM
1 tablespoon of butter
Salt & pepper to taste
Peel and chop the onion and potatoes into roughly ¾ inch pieces, and
cook in skillet or frying pan until tender. Chop SPAM into similar size
cubes as onion and potatoes and add to skillet or pan add salt and
pepper and continue cooking until all ingredients are, crispy and spam
is well heated through. Allow to cool slightly and serve with some
crusty bread and butter.
SPAM & MACARONI
STIR FRY
1 tin of SPAM, cubed
6 green onions, cut into 1/2 inch pieces
Leftover macaroni
1/2 cup green beans
1/2 cup mushrooms
1/2 cup cherry tomatoes, halved
Soy sauce
Sesame oil
Fry SPAM cubes with chopped onions. Add mushrooms and green beans when
the SPAM and onion are nicely browned. Pour a little soy sauce over
leftover macaroni while it is still in the fridge container. Stir and
let sit for a few minutes while adding tomatoes to the wok. Add
macaroni and heat through. Just before serving add a drizzle of sesame
oil.
Hawaii
SPAM FRIED RICE
2 cups leftover rice
1-1/2 cups SPAM, cut into match stick size strips
1 egg
1 tablespoon soy sauce
3 green onions, thinly sliced
Sesame oil
Heat a small amount of sesame oil into a skillet and brown SPAM pieces
on all sides. Mix in the rice. Mix the egg with the soy sauce and stir
into the hot rice and SPAM. Stir gently until the egg is cooked.
Sprinkle green onions on top and serve.
LOCO MOCO
A popular and hearty Hawaiian breakfast dish that some say was invented
in 1940's in Hilo Town on the Big Island of Hawaii.
2 scoops of white rice
1 slice SPAM
1 fried egg
1/2 cup brown gravy
Put 2 scoops of rice in a shallow bowl or on a deep plate. top with a
hot SPAM slice, top the meat with a fried egg (usually cooked sunny
side up) and top with gravy. Typically served with the ever popular
macaroni salad.

CANTONESE SWEET AND
SOUR SPAM
1 tablespoon cooking oil
6 green onions, sliced 1/4 inch
1 small cucumber, cut into chunks
1 tablespoon cornstarch
1 teaspoon Soy sauce
1 can SPAM, cubed 1/2 inch
1 large carrot sliced diagonally
1 clove garlic, minced
2/3 cup water
3 tablespoons each: sugar, ketchup and vinegar
1 can (8 ounce) Bamboo shoots, drained
In large skillet, cook oil over medium heat. Add carrot, green onion,
garlic and cucumber; cook, stirring occasionally until crisp tender (4
to 5 minutes). Add remaining ingredients except SPAM and bamboo shoots.
Cook, stirring, until sauce is thickened. Add SPAM and bamboo shoots.
Cook until heated through. If desired, serve over rice. Makes 4
servings.
BAKED SPAM ON A BUN
1 can (4 ounce) sliced mushrooms
2 cups SPAM; finely diced
2 celery stalks; finely diced
1/2 cup canned bamboo shoots, diced fine
2 green onion stalks
Sauce Mixture:
2 tablespoons cornstarch
2 tablespoons sherry
2 tablespoons light soy sauce
1 tablespoon vinegar
1 tablespoon sesame oil
1/4 cup chicken broth
1 teaspoon Hoisin sauce
1 teaspoon oyster sauce
Stir fry filling ingredients together for 2 minutes, then add sauce
mixture. Stir until thickened. Chill well before wrapping. Place a
heaping tablespoon into the center of the dough. Pinch the dough
together with your fingers. Then shape into a ball. Place onto a
parchment lined cookie sheet. Seam side down about two inches apart.
Cover with plastic wrap for 45 minutes. Glaze each bun with the egg
yolks and milk allow to sit for 5 minutes then repeat again. Bake in a
preheated 350F oven for about 20 minutes, or until the tops are browned
lightly. Cool on a wire rack.
Italy
ANTIPASTO SALAD
1 can (16 ounce) Chick peas, drained
1 small green pepper; seeded, chopped
1 small red onion, thinly sliced
1 jar (2 1/2 ounce) pitted black olives, drained
1/2 cup Italian dressing
4 cup torn romaine
2 cup torn lettuce
1 can of SPAM, diced
4 ounces Provolone cheese, cubed
2 tomatoes, each cut into 6 wedges
In small bowl, combine chick peas, green pepper, onion, olives, and
dressing. Cover and refrigerate at least 1 hour. Just before serving,
combine romaine and lettuce in salad bowl; pour on chick pea mixture.
Top with SPAM, cheese, and tomatoes. Toss gently to mix well. Serve
immediately.
SPAM CARBONARA
1 onion, finely chopped
1/2 teaspoons fennel seed
1 3/4 cup chicken broth, divided
1 can SPAM, cut into strips
3 egg whites
1 egg
1 package (16 ounce) Vermicelli
1 1/2 cup Parmesan cheese, shredded, divided
In large nonstick skillet, combine onion, fennel and 1 cup broth. Bring
to a boil; stirring occasionally, until liquid has evaporated. Add Spam
and remaining 3/4 cup broth. Bring to a boil. In small bowl, beat
together egg whites and egg. Cook vermicelli according to package
directions. Drain well. Add hot pasta to Spam mixture. Pour egg mixture
over pasta and immediately begin lifting with 2 forks to mix well. Add
1 cup cheese. Mix until all broth is absorbed. Sprinkle with remaining
cheese. Serves 6.

BROILED SPAM APPETIZERS
A spicy ham salad on snack size rye bread that is quick and easy to
make for any occasion.
7 ounces Spam light, finely cubed
1/3 cup sharp cheddar cheese, shredded
1/4 cup chopped celery, finely
1/4 cup mayonnaise
1 tablespoon parsley sprigs, chopped
1/8 teaspoon hot pepper sauce
64 slices of rye bread (or toast triangles or crackers)
Combine the SPAM, cheese, celery, mayonnaise, parsley, and hot pepper
sauce in a medium bowl and spread mixture over rye bread. Place on a
baking sheet and broil for 1 to 2 minutes or until cheese is melted.

RANCH STYLE POTATO

3 medium potatoes, peeled and cut up
1 small onion, diced
2 eggs
2 cups low fat milk
1/4 teaspoon celery salt
1 can SPAM, diced
Combine potatoes and onion in saucepan with enough water to cover. Boil
until tender. Mash potatoes coarsely in the water. Break eggs into the
simmering potatoes, stir in. Add milk, simmer. Stir frequently until
desired thickness. Stir in SPAM and celery salt. Serves 4.

SPAM BARBECUE
SANDWICHES
1 cup ketchup
2 tablespoons vinegar
2 tablespoons brown sugar, packed
1 tablespoon Worcestershire sauce
1 can SPAM, diced, sliced in 6 pieces
6 hamburger buns
Place ketchup, vinegar, sugar and Worcestershire in a skillet; bring to
a boil. Add SPAM; stir until meat is well coated. Cook until heated
through. Serve on split hamburger buns. Serves 6.

SPAM CONES
1 can of SPAM, ground
1/4 cup Mayo
1 small dill pickle
4 ice cream cones - flat bottom
1/4 cup shredded cheese
Mix all ingredients and scoop into cone. Top with cheese.
SPAM & CHEESE
SOUFFLE
4 eggs
1 cup milk
1/3 pound cheddar cheese, cubed
4 slices bread
4 slices SPAM
Remove crust from bread and cube it. Beat eggs, add milk, cheese and
SPAM. Place in large oven proof dish and refrigerate overnight. Bake 1
hour at 350 degs or until firm.
PUFFY SPAM 'N EGGS
Puffs:
2 tablespoons butter
Boiling water
Dash of salt
1/4 cup all purpose flour
1 egg
1/2 teaspoon caraway seed
Melt butter in 1/4 cup boiling water. Add flour and dash of salt; stir
vigorously. Cook and stir until mixture forms a ball that doesn't
separate. Remove from heat and cool slightly. Add egg, beating
vigorously until mixture is smooth. Stir in seed.
Drop dough in two portions, 3 inches apart on greased baking sheet.
Bake at 450 degs for 15 minutes. Reduce heat to 325 degs and bake an
additional 25 minutes. Remove puffs from oven; cool slightly. Slice off
top and remove moist membrane in each puff.
Filling:
1 1/2 tablespoons butter
1 1/2 tablespoons all purpose flour
Salt & Pepper to taste
1 cup milk
1 can SPAM
2 hard cooked eggs, sliced
1 teaspoon chopped, canned pimiento
2 tablespoons chopped green pepper
Melt butter in saucepan over low heat; blend in flour, salt and pepper.
Add milk all at once. Cook and stir until mixture thickens and bubbles.
Add remaining ingredients; heat through. Spoon mixture into puffs;
serve immediately.
TURKEY SPAM OPEN
FACERS
1/4 cup clear French salad dressing
1 tablespoon chopped onion
1/8 teaspoon pepper
6 fresh asparagus spears, cooked and drained
1 tablespoon butter, softened
2 teaspoons mayonnaise
2 slices bread, toasted
4 slices turkey SPAM
2 slices Swiss cheese
Combine dressing, onion and pepper. Pour over asparagus in saucepan;
bring to a boil. Blend butter and mayonnaise; spread on toast slices.
Arrange SPAM on slices, top with asparagus. Halve cheese slices
diagonally; place on asparagus. Broil until cheese melts.
CHEESY SPAM CHILI
1/2 cup green pepper strips, narrow 1 inch pieces
1/4 cup chopped onions
1 tablespoon butter
1 can (8 ounce) kidney beans
1/2 cup tomato sauce
1/2 teaspoon chili powder
1/2 can hickory SPAM - chunked
1/2 cup sharp Cheddar cheese
Using a saucepan, cook green pepper and onions in butter until tender -
not brown. Add beans, tomato sauce,chili powder and SPAM. Cook,
stirring occasionally until hot. Add cheese; stir until melted. Serve
over corn chips.

centers of various flavors, such as raspberry, lemon, lime, orange,
strawberry, etc. I use various liqueurs, such as Kahlua,
