Eat - Healthy recipe for mayonnaise
Most mayos that are on the store shelves are very unhealthy. Make this recipe at home, and don't feel the least bit guilty eating it. The fats are healthy. Refrigerate in order to get the proper consistency.
Judy’s Coconut Mayonnaise
Makes about 1½ cups
2 Free-range Egg Yolks
1 Tbsp. Dijon Mustard
1 Tbsp. Fresh Lemon Juice or Raw Apple Cider Vinegar
½ tsp. Unrefined Sea Salt
¼ tsp. Fresh Ground White or Black Pepper
½ cup Virgin Coconut Oil
½ cup Extra-virgin Olive Oil from the first cold-pressing
*Raw Honey, to taste (optional)
1. Place the all of the ingredients, except for the oils, in a blender or food processor.
2. Then with the motor running slowly add the coconut oil and olive oil in a steady stream. This should take 1-2 minutes.
3. Continue blending until there is no free standing oil.
4. Refrigerate.
